The History of Chile in New Mexico

The history of chile peppers in New Mexico is as colorful and varied as the fruit themselves, peppered with imaginative stories of how the Land of Enchantment established its unique chile cuisine. From its traditional dishes like enchiladas, tamales, gorditas and red chile-marinated pork carne adovada, to more recent additions like green chile cheeseburgers, there's a reason why New Mexico honors the chile as a symbol of the state.
Archeological evidence reveals that chiles have been used domestically in the Americas for 6,000 years, originating around the South American equator. Birds are most likely responsible for bringing them north. Not only do birds lack the receptors that sense the heat of the chile, they do not digest the seeds, making them a perfect transport system for spreading chile around the world. The chile plant plays its own part, too. The heat of the fruit deters any animals but birds from eating them, and the peppers can only be pulled from the plant by birds when the fruit is ripe and the seeds are ready to propagate.
Native peoples in the Caribbean were already using chile in their cooking when Christopher Columbus arrived. The heat of the fruit reminded Columbus of black pepper, and it was Columbus who added the appendage "pepper" to chile. Columbus was savvy enough to take the fiery fruit back with him to Spain. At the time, black peppercorns were in such high demand that some countries used them as currency.
Exactly how chiles wound up in New Mexico is disputed, but one thing is certain: the Native Pueblo people of New Mexico have a long history of growing the fruit. The state's singular style of cooking with chile evolved from melding native and Spanish populations.
The chile plants themselves are members of the nightshade family, Solanaceae. Many members of the Solanaceae family originated in the Americas, including potatoes, tomatoes and tobacco. The compound that causes the heat of chile peppers is capsaicin, made up of seven alkaloid or capsaicinoids. Three components cause the quick bite at the back of the palate. Two cause the slow burn on the tongue.
The heat of chile is measured in Scoville units, named after Wilbur Scoville, the chemist that devised the test for heat in 1912. The test involves mixtures of water and chile that are increasingly diluted until the tester no longer feels the burn. The Scoville number, given in multiples of 100, represents how many times the mix had to be diluted.
New Mexico State University at Las Cruces has long been a center of scientific studies about chile peppers. In the early 1900s, university horticulturist Dr. Fabian Garcia introduced a new chile cultivar, New Mexico No. 9, that revolutionized the national chile market. With dependable heat and uniform size, the chile for the most part replaced the traditional landrace variety.

Today, eggs have expiration dates. Those who remember when egg cartons did not have an expiration date, ignore the dated cartons. They are convinced that today's refrigerators are pretty good at preserving eggs. However, in recent years, reports of bad bacteria in eggs that sat for an undetermined amount of time led to heeding the expiration dated cartons. So unless you have the gadget discovered in France that preserves eggs indefinitely, sticking to expiration dates on egg cartons is the safest bet.

Quinoa (pronounced "keen-wah") is a super food not to be missed by anyone interested in healthy eating. Quinoa has been around for over 5,000 years. It originated in South America, and the ancient Incas called quinoa "the mother grain" and considered it to be sacred and a gift from the gods.
Quinoa is considered an almost perfect food because it's high in protein, is gluten free, cholesterol free, and is packed with vitamins, minerals, antioxidants, and important amino acids. Quinoa only takes about 15 minutes to cook. Instead of always cooking quinoa in water, we sometimes use low sodium chicken broth or tomato sauce. We cook the quinoa long enough to see the small seeds pop open and they look like little stars. Our reward is an ingredient that is light and fluffy with a bit of crunchiness. The end result is an interesting combination of textures and flavor. We've added quinoa to casseroles, soups, stews, salads, and sauces. A great side benefit to quinoa is that it's filling.

Venison is meat from the deer, and these days it is much more common as there are deer farms which will deliver venison in refrigerated vehicles to your door. You may have heard that you have to hang venison before you can cook it, but this was only the case before refrigeration. These days, you simply freeze the meat when it is fresh and defrost it in the refrigerator and not at room temperature, as it tends to be affected by the air. It becomes a darker brown and tough.
Venison contains very little saturated fat and is generally lean so there is little animal fat to be cut from it. In fact some recipes call for it to be larded (strips of bacon sewn through the meat) as it tends to be dry. However if you braise it and marinate it first in red wine and/or brandy, in he fridge, you won't have to lard it.
The meat has vitamins B12 (cobalamin) and B2 (riboflavin) as well as vitamin B3 (niacin) and B6 (pyridoxine) and contains the minerals iron, phosphorous, zinc, selenium and copper. Four ounces of the cooked meat will provide you with 68 % of the recommended daily protein intake and this will contain only 179 calories and only 1.4 grams of saturated fat. This makes it much healthier than other red meats.
Vitamins B12 and 6 prevent the build up of the dangerous molecule homocysteine which can damage artery and cell walls, while niacin (B3) is thought to reduce the risk of osteoarthritis, and B2 (riboflavin) seems to prevent migraine attacks. Iron is necessary for healthy blood and is good for menstruating and menopausal women.
Venison is a rich meat and you can't eat as much of it as you can beef; it has a gamey flavour which can be reduced by marinating it with spices and herbs such as thyme, rosemary, juniper berries, cinnamon and cloves. Some orange zest might be to your taste too.
You don't have to buy a whole haunch of venison, but can start off by trying venison sausages which are delicious and contain less fat than others. Venison may be more expensive than other meats, but it is healthier, and although you wouldn't want to eat it every day, it is good to include in your diet perhaps once or twice a month in winter.
We are lucky, as in mediaeval times if peasants were caught poaching deer in the British monarch's forests without a royal license, they could be hanged, blinded, castrated or even sewn up in a deer skin to be chased by deer hounds, (usually Irish wolfhounds).

Personally I only like the real French Brie and prefer a good Camembert or any goats' cheese, but if I buy Brie it has to be ripe and ready to drip off the knife, so if you do love this and buy an under-ripe one, don't keep it in the fridge, but store in a cool place for a couple of days so that it ripens and is perfect to consume!
Brie made from cow's milk is not particularly great for your health, but who could resist a piece of it occasionally? It's one of those foods that, to coin the phrase used to advertise cream cakes in the UK, are "naughty but nice."

You can add fruit such as blueberries or cranberries which are packed with health benefits or add small pieces of cooked chicken or ham. You can buy cottage cheese with ham and pineapple too.
If you have any left over milk at home why not make your own? You need a stainless steel of enameled pan, milk, lemon juice or white vinegar and salt and a sieve and some material to line this with. If you have two pints of skimmed or semi-skimmed milk, boil it in a pan, and stir occasionally while bringing it to the boil so that it doesn't stick. Allow it to cool for a few minutes and add 2 tablespoons of lemon juice or white vinegar and stir. The milk will separate into curds and whey, and you should allow it to cool and then strain it through the cloth and sieve. Leave the cloth, tied loosely, to hang over your kitchen sink overnight and eat the cottage cheese in the morning adding whatever of the ingredients mentioned above that you have to hand and a pinch of salt.
